After 58 years serving patients in DeLand, Chiropractic Physician John D. Gaffney, “Doc,” is retiring his practice. It seems more and more women come in the clinic with thyroid problems as one of their primary health issues.

So many are still tired, can’t lose weight, have brittle hair and nails, constipation — the list goes on.

We have a checklist in our office that lists with 27 symptoms for thyroid issues. And at least one-half of the women who continue to suffer with these symptoms are on thyroid medications, too!

I was reading an article this week about the Teflon pans we have been using for years; about how ingredients in those pans may be one of the culprits. A similar article was posted on Dr. Mercola’s website, too.

As a family, we stopped using Teflon five years ago. Sure, it was easy cleanup the Teflon pots and pans, but chemicals in our food? Instead of those, we use more pure butter, coconut, olive and other oils to coat the pan. Oils are needed for our brain, joints, skin and hair anyway.

If you love your Teflon, consider using ceramic-coated pans instead. Use more oils in your cooking (like those I list above), and experience fewer health issues over the years. We have. Isn’t it worth a try?

I found more great information on Dr. Mercola’s website this week, and wanted to share.

We all need to be careful what we read on the internet and what we decide to believe. I check out lots of sites weekly. The first thing I do is check for the sources and references. That’s how we can tell if the information is correct, and not being bought by some company to push their ideas and products.

My favorite articles that I would really, really like you to read are on 2/10, 2/22 and 2/28.

In February, Dr. Mercola posted articles that reveal the truth about two false bits of information that have been floating around the country since the 60s! One is Cholesterol and the other is Chiropractic. The proof (as if we ever needed “proof”) that they are wonderful, vitally important and safe.

  • Eggs are good for us – of course they are – Mother Nature does not make bad things. Some companies decided 50 years ago that eggs and cholesterol were bad for us. Diet restrictions were placed then came the drugs. Health did not get better, it got worse.
  • Chiropractic has been around for thousands of years. AS we know it – over 100 years. Chiropractic Physicians are REAL doctors, too. They have the education, state boards and government guidelines as MDs & DOs. And, chiropractic really works. I started in Chiropractic at age 20, and it saved me from major nerve surgery. My MD told me that I would be out of pain, but would lose use of my arm to some unknown degree. Fast forward many years – I would not have been working in the field (Chiropractic Physician Assistant) and then on to becoming an Acupuncture Physician. What a waste that would have been!

The most important point here – please check out your sources and references. What is the motive for the information? Know the side effects, are they good or bad? Can changing your life style a bit change your health? You bet it can. And we can help!

Dr. Mercola had a great article about organic foods and the truth on his website recently. (Mercola.com is a great website, I recommend you reference it often!)

Doc and I are like everybody else, we have a food budget. I was concerned about the higher food costs but felt so strongly about eating organic foods. Four years ago, I started eliminating grains from our diet. We underwent a transition process. We stopped eating cereals first. That saved $4 a week; I substituted eggs (local or organic) with veggies and lean meat or cheese. We also use the FIT FOOD by Xymogen most days (available at our clinic).

We switched from cows milk to almond milk (same price). With the FIT FOOD (at 6:30 a.m.) we realized we were not experiencing a blood sugar slump around 10 a.m. (so no snack needed) and were barely ready for lunch at 12:30 p.m.

Each week, I stopped buying a veggie filled with pesticides/GMO processed, and bought an organic one. After a month, I noticed our food bill did not go up. I also noticed I was not throwing away veggies that were hard one day and then rotten two days later! The best thing was that the organic vegetables tasted much better. It took two years to continue this process. Still, our food bill is the same as it was five years ago. We are healthier, no joint pains and sleep better, too!

The staff at the Volusia Center for Complementary Medicine in DeLand is pleased to welcome chiropractic physician, Susan Vigo to their office. Vigo is a graduate of Palmer Chiropractic College in Port Orange and has previously worked as an associate in New Smyrna before coming to DeLand. Her chiropractic interests include nutritional counseling and neurology. She believes that blending these with chiropractic only strengthens the body/mind connection.

“Being able to practice close to home and inspire people in this community about wellness and how chiropractic can help the body and mind function as a complete unit is what I am is striving for,” says Vigo, who notes that she views each person as an individual and as such will tailor each treatment plan according to each person’s specific need. ACUPUNCTURE INCREASES FEEL-GOOD CHEMICALS – Acupuncture relieves insomnia, neck pain, irritable bowel syndrome, and helps menstrual cramps. My favorite website, www.HealthCMI.com, reported recently how acupuncture increases u-opioid receptors (the “feel good” chemicals I talk about) involved in the reduction of referred pain.

ACUPUNCTURE POINTS HAVE ANATOMICAL STRUCTURES – I learned recently of an Acupuncture study using a specialized CT scan that shows acupuncture points have anatomical structures. There are real distinctions between acupuncture points and non-acupuncture points. Acupuncture points have microvascular structures and can be seen around thick blood vessels. This is very exciting news!

SUGAR AS POISON? One last item…sugar consumption. According to Dr. Robert Lustig, Professor of Pediatric Endocrinology at the University of California, San Francisco says sugar acts as a chronic, dose-dependent liver toxin (poison) when consumed it in excess. (We consume more than 20 times of sugar than or ancestors did!)

Sugar is in almost every processed food, and it comes under several names, including high fructose corn syrup. For the average person, there is a daily consumption of about 20 teaspoons a day, and children are at a greater risk for consuming too much sugar. Eating whole foods (not processed foods) is the best diet. And, it can be done even with the typical busy life.

Dr. Vigo is a Chiropractic Physician. She will be seeing patients when Doc is not in the clinic (Tues/Thurs) in addition to her regular hours (to be determined).

Foods to eat to replenish our Kidney and Bladder Meridian and a Yin Tonic for winter are: apples, asparagus, eggs, clams, kidney beans, walnuts, yams, lemons, tomatoes, dill, green beans and plums. I am amazed at how fast time flies! It just so happens our homeopathic and herbal medicines are flying off the shelves, too!

Recently, Christine and Christy were discussing how our clinic is constantly ordering homeopathic medicines and nutritional supplements, but no matter how many boxes come in, we need more!

Why is this? It’s partly because we are in the middle of spring, and that means it’s Liver and Gall Bladder time. Many patients come in with problems this time of year. But, we have lots of homeopathic and herbal medicine options to help. Don’t suffer from bladder infections and cough/sinus problems…and a host of other ailments. Again, we can help!

Also add sesame seeds, celery, chives, clams, peppermint, plums and vinegar to your diet. As usual, lots of veggies and a little fruit are very cleansing for the systems.

In Oriental Medicine, each Meridian has a season that represents a changing of where a different set of Meridians are active. Spring is the season for the Liver and Gall Bladder Meridians; they care for the organs of liver and gall bladder as well as the eyes, blood, tendons and ligaments, and feelings such as anger, frustration and courage.

The Liver Meridian. A stagnated Liver Meridian can lead to headaches, migraines, constipation and a bitter taste. Sour is the flavor for spring, so to alleviate this experience, try adding some lemons, pears, apples, grapefruit, kiwi, mandarin orange, olives, pineapple, strawberries, tangerines and tomatoes to your meal plan. (Read more about this in my article about organic food.)

Blood Stagnation and the Liver Meridian. The Liver Meridian can be responsible for Qi and Blood Stagnation — and these can be the cause of a variety of pains. Acupuncture helps relieve the stagnation. To help your body heal from pain, include chestnuts, chili peppers, chives, crabs, onions, mustard leaves, peaches and vinegar in your diet.

Blood deficiency and foods that help. Blood Deficiency needs tonics to build us up, and Blood Deficiency may leave a person pale, weak, dizzy and tired. Has anyone said you are anemic? After childbirth or surgery, one can develop a blood deficiency. Eating adzuki beans, apricots, beef, beets, eggs, dark leafy greens, figs, grapes, kidney beans, parsley, sardines and watercress helps build up your blood.

The Liver Meridian and our eyes. The Liver Meridian works with our eyes. Foods that help this are cucumbers, tofu, water chestnuts and chicken.

It’s time to detox. Simple detox procedures are always good for the body in the spring, since this time of the year represents new growth and releasing the old. Black sesame seeds, celery, chives, clams, crabs, peppermint, plums, saffron, chicory, vinegar and wine help with a detox and support the Liver and Gall Bladder Meridians.

One of my favorite detox foods is beets. I eat one every day in the spring. Also, I recommend Dr. Perlmutter’s book, Grain Brain. We are seeing incredible, yes, incredible changes in our patients who are following his recommendations.

How much fruit should you eat this season? I recommend only one serving of fruit a day; keep it under 15 grams of fructose. (See my list.) Be sure to eat enough protein – especially eggs, chicken, clams and crabs every day.

This has been the best meal plan I have seen.  We’ve been recommending it for more than four years now.

The best “side effect” of the no grain meal plan is the disappearance of joint pain. And, weight loss! People ont he plan have lost anywhere from nine to 25 lbs in four months. On the plan, we sleep better and our memories improve.  It’s easy to do the transition if you are WILLING to do it.  Doc told someone he lost 15 lbs last year and did not know why – I forgot to mention to him we were eliminating grains! And one year later, we both are still slimmer.

The “No Grain” Daily Food List

  • Eat 6 servings of the following: chicken, tuna, fish, and eggs (1-2), beef, nuts (14), cheese (1 oz) and 1 cup of beans for fiber and a sense of fullness.
  • Eat 7-9 servings of veggies a day (lettuce can be eaten but not counted).   Use lemon, olive oil and or vinegar for your dressing. Try kale in your salad or “ recipe on our website.
  • Use lots of herbs & spices but limit salt. Only 1 piece of fruit a day but no juice unless it is a veggie /tomato juice.
  • DO NOT EAT cereals, grains, bread, pasta,macatoni crackers, rice, oatmeal, cakes, and cookies.
  • You can eat little red potatoes but only 1 serving 3 times a week – sweet potatoes are great and you can eat 1 a day.  Drink plenty of water.  If you are used to drinking milk – only 8 oz a day.  Try Almond Milk – the vanilla flavored 30 calorie one is very popular.  Limit coffee and tea – try green and herbal teas.
  • No soy products.

Right now, we are halfway through autumn – the season for the Lung/Large Intestine Meridian. The good news is we have been treating fewer sore throats, sinus symptoms and bowel problems this season than last year around this time, and what we have been treating is not as severe. That’s wonderful!

I believe it’s because more of you are getting your tune-ups and taking your supplements. Remember: It is really important to get your Acupuncture treatment every three months, too. The whole immune system is easily strengthened by Acupuncture and nutrition, working harmoniously together.

Breathing like this will relieve your symptoms of stress.  Nothing is more important than good health.  With good health you CAN cope with anything!

And of course, we tend to overeat starting now to January 1st. Did you know the average American gains more than seven pounds each year, and usually doesn’t lose it? This doesn’t have to be you! Change your behaviors and make better choices.

Do you recall how last year, at this same time, it was cooler. As a matter of fact, just last week we had some of the hottest days in three years!

Labor Day is here and in lots of states that says summer is over, but it’s not over here, for sure! But, there’s also something interesting that happens around this time of year. Patients come in with different symptoms. We’re still treating nausea, a tight band feeling around heads and a general hot yucky feeling (late summer Spleen & Stomach Meridians).  In addition, this past week, people have started showing up with sinus, constipation and skin rashes. Usually this happens closer to the actual date of autumn.

The Lung meridian takes care of the lungs and skin. The Large Intestine Meridian works with the sinuses, throat and the bowels. They are affected by dry weather. The emotions for these the Lung and Large Intestine meridians are grief, sorrow and “letting go.” Are you feeling these emotions right now?

We have noticed just in the first two weeks after school starts, children come down with “colds.”  Adults start showing signs a couple of weeks after that.  Our “regular” patients – the ones that come in monthly or every three months — are not getting sick. We’ve seen just a few mild sore throats and sinus congestion.

I believe people are finally taking responsibly for their health more, and we need to do just that.  The time to depend on a “prescription” to fix us is over! If you think you are catching something try the following techniques and foods to eliminate the symptoms:

  • Rubbing around your nose, around your collar bone, from your thumb up your arm to your collar bone and by the nail bed (outside) on your second finger up your arm across your neck, on your face to your nose will help stimulate these 2 Meridians.
  • Foods to eat in this season for the Lung are carrots, cinnamon, garlic, ginger, grapes, green onions, honey, olives, peanuts, pears, peppermints, persimmons, radish, tangerines, walnuts, water chestnuts.
  • To help the Large Intestine Meridian, eat tofu, black pepper, Chinese cabbage, corn, cucumbers, eggplants, figs, honey, lettuce, nutmeg, persimmons, salt, and spinach.
  • For asthma problems, add pumpkin to your diet.
  • Constipation? Add bananas, Chinese cabbage, pears, spinach and sweet potatoes.
  • For coughs, use honey and lemon mixed together, peaches, mangoes, strawberries, tangerines, carrots and asparagus also help.
  • Sore throats feel better with pineapple juice.
